The History of the Humble Potato

In 1536 Spanish Conquistadors conquered Peru, discovered the flavors of the potato, and carried them to Europe. 

Europe suffered many famines, and the potato saved many from starvation.  Because potatoes were so productive, the effective result, in terms of calories, was to double Europe’s food supply. It isn’t a summer meal, barbeque or picnic without a heaping plate of potato salad.  Often seen as a classic American food tradition, there are plentiful recipes from various regions in America and other countries.  From mayo free Greek potato salads to Peruvian potato salad (papas Huancaino) with its creamy dressing made with spicy yellow pepper paste, queso fresco and eggs and black olives.  Amish potato salad, an American recipe contains sugar and is sweet.

                             

   

Yogurt, sour cream, or oil is used instead of mayo.  Additions such as apples, olives, peas, green peppers, pickles.   Also herbs such as cilantro, parsley, oregano, rosemary, tarragon, paprika or thyme. Such recipes have sugar, some have vinegar.

Irish Potato Salad recipe

Filled with cabbage and corned beef, it’s a great winter meal, with familiar Irish tastes.

Ingredients

2 tbsp vinegar

1 tsp celery seed

1 teaspoon mustard seed

3 medium/large potatoes

2 tsp sugar

2 cups finely shredded cabbage

1 12-ounce can corned beef, chilled and cubed

3/4 teaspoon salt 

¼ cup sliced green onion

¼ cup finely chopped dill pickle

¼ cup mayonnaise or salad dressing

¼ cup milk
